Candied Sweet Potatoes
Do you know when is the potato digging time? It’s about the late September that’s coming. So I think about the sweet potato and want to find the easy recipe for today. I can be both a side dish and sweet snack for you, whatever you want. For other interesting information, this dish represents traditional American cooking and of that prepared with the indigenous peoples of the Americas when settlers first arrived.

Besides simple starches, sweet potatoes are rich in complex carbohydrates, dietary fiber, beta carotene (a vitamin A equivalent nutrient), vitamin C, and vitamin B6. Also, you can use sweet potato for many recipes like Sweet potato pie, Sweet potato fries and Sweet Potato Butter etc.
Ingredients
- 3/4 cup water
- 3/4 teaspoon of cinnamon
- 1/2 teaspoon of grated orange rind
- 1/2 teaspoon of nutmeg
- 1/2 stick margarine
- 1 scant teaspoon of vanilla
- 1 1/2 cup sugar
- 6 medium sweet potatoes
Preparation
1. Prepare potatoes (peel, slice and wash) and keep covered with water until ready to cook.
2. Add 3/4 cup water, margarine, 1 scant teaspoon vanilla flavor and 1 cup sugar in Dutch or large pot.
3. Cover and bring to a rapid boil. Stir frequently, so as not to let the syrup stick.
4. Add the potatoes when the syrup has thickened.
5. Mix the cinnamon, orange rind, nutmeg and 1/2 cup sugar, and sprinkle over the potatoes.
6. Lower the heat and cook until tender. Gently spoon the syrup over the potatoes.

Sounds divine! I don't have sweet potatoes but I can imagine it also works with carrots. At least I'll try because I got a lot of those...
