Humans need balance. There’s something intrinsic in our makeup that drives us to seek out light and shade, calm and excitement, work and play. If we tip the scales too heavily to one side or another, things start going awry. For this reason, holidays are not only a lot of fun and great experiences, they’re also good for our health. The benefits of relaxation are well documented, and while we’re not quite at the stage of Fiji Holidays being covered by Medicare, more and more people are realising that a holiday can be exactly what the doctor ordered. Here’s how:

1. Stress reliefOf all the problems we humans suffer these days, so many can be linked back to stress. Stress is a funny thing—the effect it has on our bodies was originally designed to help us in times of need. That familiar racing of the heart and drying of the mouth we get when we’re under stress is actually a biological tool called the flight or fight reflex. It’s a little evolutionary trick that helps us pull out those extra adrenalin reserves when we need them most—which in prehistoric times, would have been when we were eye-to-eye with a sabre-tooth tiger, for example.

    Healthy Curries for Dieters

As an avid curry fan I felt the end of the world was fast approaching when I decided a few years ago that something had to be done about the gradually expanding waistline. How could I get through the week without cooking at least one curry and would I ever be able to eat at my favourite curry house again? My impending holiday to Rajasthan did not bode well either. Surely I was not going to turn into one of these people who order a salad regardless of where they are in the world?

Luckily the days when a limp lettuce leaf and a tomato constituted a salad are well and truly over and nowadays you can really go to town and make an unusual and tasty 21st century salad.

Not all salads need to have meat or poultry in them but if you have a chicken breast in the fridge this makes a good base for a salad. A nice piece of organic chicken needs no added flavour but if you are on a budget and feel that the chicken might be a little tasteless then don’t worry as help is at hand. Schwartz for instance do a range of rubs for poultry so if the chicken needs a bit of tarting up that is a quick and easy way to do it. The first time we attended a summer prom we were well and truly humbled by many of our fellow picnickers who seemed to have half their dining room with them and a feast that looked as if it had been prepared by Raymond Blanc. Vowing to do better the following year we got together with a group of friends for a classical extravaganza at Warwick Castle. We all took our own collapsible chars and sat around a wallpaper pasting table whose humble origins were cunningly disguised by a smart white table cloth and enjoyed an impressive meal.

From drinking it regularly or visiting some of the world's best wineries, getting to know wine will take a little time. For those in Australia, you can visit and even stay in some of the world's best locations. To truly know what wine is good for what and when you will need experience. If you enjoy wine, then finding out and building your knowledge is not such a bad thing after all. Here are some tips to getting to really know wine.

    Photo: 96dpi

    • Naming. To know you wine you need to know the names. It is a good start to know which wines are called what. One big rule of thumb and one of the rules of knowing wine is knowing that Old World wines are named on their region. New World wines are named on the basis of the grape variety. So for example, Burgundy wines are from that region in France, but wines of the same grape will be called a different name in the United States.
    • Matching with food. The simple rule to match food and wine is to match it by weight, and you can also match it by colour. For example you might want to go with a good white wine when you are eating fish, and you will definitely enjoy a good heavy and thick Merlot when enjoying an expensive piece of steak.
    • Location. Many wines are discussed in terms of the location and soil type. Naturally enough the taste of the wine will vary depending on the type of soil. Some regions are fanatical about this, such as near Lyon in France – the Burgundy region. If you wish to get a real idea of these differences here in Australia, you might want to try visiting some of Australia's top wine regions. The Hunter Valley in New South Wales and the Barossa Valley both have their distinctive soil types. Look for inexpensive day tours for both the Hunter Valley and good Barossa Valley accommodation to make your stay over several days. By trying the wines and getting to know the soil types you will start to get a real feel for how a region influences the taste.
    • Year and age. Good wine gets better with age, well until a certain point. The more that you get to know a wines, you will note that certain years in certain locations have a better taste. This is because that year in that location had particularly good conditions to make good grapes to make even better wine. By finding out what are the better years for different locations you are more likely to find a better wine. Each year and each location is different.
    • Discussing. You will hear many kinds of references to the flavour of a wine. It is a good idea to get to understand your own taste buds. We can remember flavours by giving them names. Taste is very subjective, much like colours. When I see red, you might actually see another colour, but you know what you see as red too. This way we can discuss red although we might be seeing it differently. Learn what wines are described by people with experience and then you can learn what to call the flavours as you get to know them. This is how we learn to describe and also take advantage of other people's descriptions.

    Why Bother to Eat Healthy?

It’s unbelievable! Just when I develop a taste for fish, experts are telling us they’re not as healthy as they used to be. Environmental toxins and pollution have fouled many species of ocean life. Mercury, lead and PCBs in tuna and other fish make it dangerous to eat a once-important source of essential fatty acids and protein. I don’t know about you, but I had to ask myself, “why bother looking for healthy fish to eat?”

And why should my taxes go up so people that don’t take care about themselves can abuse yet another government social program? Now you are probably saying; yet you Republicans; always complain about taxes and you never have a solution.

Your favourite pub fare, lighter and healthier

To me, pub food is a treat that I indulge in only rarely. And as I watch my diet pretty closely, I usually get a bit disheartened at the fact that my entire week has been messed up by a single meal. But if you’re like me and enjoy pub food (and sometimes crave it!), then you’ll be happy to know these few tips to enjoy the pub food you love, at home, with better-for-you alternatives.

    Fish and chips
Fries and fried fish are a classic pub fare, especially in British pubs all around the world. The light batter and the golden fries are hard to beat. But have you looked closely at the freezer section of your grocery lately? They have thick and wide-cut fries that are just like those chips at the pub. If you cook them in the oven instead of the fryer, you save a lot of calories. Same goes for the fish: there are some excellent frozen fish in batter, or you can even make your own by using bread crumb and spices, dredging the fish through milk and coating it with the crumbs. Again, use the oven instead of the fryer. This will save you a lot of fat calories, and it will satisfy your craving for this classic.
